    THE 10 STAGES OF ROASTING COFFEE

    Green: Beans will remain green in their purest form even as they begin to get hot.


    Yellow: It will appear yellowish, and beans will emit a grassy odor.

    Second Crack (Full City Plus Roast): The beans undergo the second, even more violent cracking and enter Full City Plus. This roast will expose more layers of intensity to the taste.


    Dark Roast (French Roast): The smoke will be pungent, the sugars will be burned as high as they can, without affecting the flavor, but the beans' entire shape will change. It is the very limit of roasting within the limits of flavor.
